This hands-on baking experience takes place at Segredos d’avó cooking school with all ingredients provided by professional Chef Luís Francisco. Learn to create traditional broa de milho with yellow and dark corn flour, master integral bread techniques, and craft specialty breads including seed bread and soft homemade rolls.
The workshop covers essential bread-making principles, proper fermentation techniques, and the art of creating diverse textures and flavors using authentic Portuguese methods and regional specialties. Students will prepare traditional bola caseira, fluffy pão fofo, bijou-style bread, chef’s signature focaccia, Avintes-style broa, and classic water bread while learning proper kneading, rising, and baking techniques for optimal crust and crumb development.
