Led by Chef Luísfrancisco, a graduate from Escola de Hotelaria e Turismo do Porto (1983), this hands-on Italian cooking experience at Segredos d’avó cooking school covers fundamental skills including fresh pasta preparation, traditional sauce making, pizza dough creation, and classic Italian preparations. Learn to create authentic Italian flavors through proper ingredient selection, traditional cooking methods, and time-tested recipes that showcase the essence of Italian cuisine.
This comprehensive workshop introduces participants to core Italian cooking techniques including risotto preparation with proper rice selection and stirring methods, fresh pasta creation from scratch, and preparation of classic sauces including pesto, bolognese, and tomato sauce. Students will master pizza dough preparation and topping techniques for Pizza 4 Stagioni, learn gnocchi parisienne preparation, and create authentic Spaghetti Carbonara using traditional methods. The session concludes with Panna Cotta preparation, providing a complete Italian dining experience that participants enjoy together at the school.
