In this 2.5-hour hands-on class, a French pastry chef trained in Paris and formerly the owner of a French pastry shop in Lisbon guides you step by step through a crisp pâte sucrée, a smooth and tangy lemon cream and a light glossy meringue, with piping and finishing techniques for a clean and elegant result. Beginner-friendly, small group of maximum ten participants, and conducted in English with explanations available in Portuguese and French.

The session is designed around understanding as much as execution, taking the time to explain why things work and not just how, so you leave with a reliable method you can repeat confidently at home rather than a single recipe you followed once. You make three lemon meringue tarts during the session, assuming you do not eat them all before the end. I am a French pastry chef trained in Paris, specialising in classic French pastry techniques. I previously owned my own French pastry shop in Lisbon, where I fully explored traditional French pastry, played with flavours and introduced locals to both iconic classics and original creations. Today I focus on teaching and sharing this craft. Creating these workshops is a genuine pleasure. I love passing on professional techniques, watching people gain confidence and seeing them enjoy the process of making something beautiful themselves.

Duration 2.5 hours. Takes place in Alvalade, Lisbon. Maximum 10 participants. Beginner to intermediate level. Sessions in English with explanations in Portuguese and French available. Photos may be taken during the session.
