At the heart of the experience are the traditional Alentejo pisos, prepared using a mortar and pestle, aromatic blends of coriander, pennyroyal, garlic, extra virgin olive oil and salt that form one of the fundamental foundations of regional cuisine and the starting point for countless soups, açordas, stews and fish dishes. As a practical application, participants prepare a traditional Baixo Alentejo Fish Pasta Stew, a Massada de Peixe, demonstrating how a simple aromatic base transforms into a comforting and elegant meal full of regional character. The experience is designed for visitors seeking authenticity, knowledge and a meaningful connection to the region rather than a technical cooking class or gastronomic show.

The programme begins at 10:00 with a private welcome and introduction to the gastronomic history of Baixo Alentejo and the role of pisos in Mediterranean culinary traditions, continues at 10:30 with discovering the aromas and ingredients of the region, moves into the hands-on cooking workshop at 11:00 with mortar and pestle preparation and ancestral flavour-building techniques, transitions at 11:45 into preparing the Fish Pasta Stew step by step, and closes at 13:00 with a private wine-paired lunch at the estate.
