The visit covers the production decisions that define quality in olive oil: the varieties used, the harvesting methods, the pressing process and how each choice along the way affects the final result in the bottle. The tasting that follows gives you the sensory tools to actually taste what those decisions produce, working through the oils with guidance on aroma, texture, bitterness, fruitiness and the characteristics that distinguish a great extra virgin olive oil from everything else on the shelf.
