About

I am a Japanese cuisine chef with over 20 years of experience in the art and discipline of Japanese gastronomy. My training was built through rigorous apprenticeship under Japanese masters, where I acquired not only the technique, but also the deep respect for tradition, precision and balance that define this cuisine. Throughout my career, I have developed extensive experience in the restaurant industry, working across different contexts and challenges, always with a commitment to delivering quality, consistency and authenticity in every dish. I believe Japanese cuisine goes far beyond flavour — it is an expression of culture, detail and sensitivity. This is the philosophy I bring to every project I take on.

  • The workshop is dynamic and the chef teaches you the basics (starting from how to properly cook the rice) to make a good sushi at home. The most interesting part is that they show you how to use local fish, that you can easily find and replicate. The space is lovely, and so are the owner and the chef. I would totally recommend the experience :)

    Learned a lot more than I expected - history, nutrition, the reasoning behind the rice preparation. Hands-on the whole time, we made everything ourselves from scratch. The place was lovely and the chef had a real gift for keeping the room laughing while making sure we actually understood what we were doing. That combination is rarer than it sounds. Left genuinely happy I went.

    Adorei este workshop de sushi. A experiência foi super prática, bem organizada e perfeita tanto para iniciantes como para quem já gosta de cozinhar. Aprendi técnicas essenciais, desde preparar o arroz até montar diferentes peças de sushi, sempre com ingredientes frescos e de qualidade. Recomendo a 100% este curso de sushi em Lisboa a quem procura uma atividade original, divertida e deliciosa na cidade.
