SCOBY stands for Symbiotic Culture of Bacteria and Yeast — it's the living culture that ferments your sweet tea into kombucha. You don't need to bring one, as a SCOBY and starter liquid are provided for you to take home at the end of the workshop.
First fermentation typically takes 7 to 14 days, depending on temperature and taste preference. Second fermentation, where you add flavours and build carbonation, takes an additional 2 to 4 days. I will walk you through the full timeline.
