Discover the art and science of fermentation in this hands-on permaculture kitchen workshop at Eco Aldeia do Vale, where ancient food preservation meets modern sustainability. Over six immersive hours, you’ll explore how beneficial microorganisms transform everyday ingredients into probiotic-rich, nutrient-dense foods and drinks, unlocking deep flavors and improving overall health.
This introductory fermentation workshop combines balanced theoretical learning about fermentation science, safety, and history with practical preparation of three distinct ferments: a Portuguese-inspired kimchi, Moroccan preserved lemons, and tepache made from pineapple or other seasonal fruits. Designed to demystify the microbial world, it reveals how anyone can ferment successfully at home using simple techniques rooted in ancestral knowledge and permaculture principles.

4 months agoI can't recommend enough choosing Aldeia do Vale for your permaculture design course (PDC). You'll be welcomed into a kind and generous Portuguese family that is deeply knowledgeable, passionate, and has so much knowledge and experience to share, including from regenerating and stewarding the beautiful land on which Aldeia do Vale is situated. Another highlight is that the course is bilingual (Portuguese/English), providing a unique opportunity for learning and cultural exchange. This was the best experiential learning course I've ever taken.

a year agoWe went for a fun mushroom cultivation course. Very nice and relaxed experience, including the ability to make your own growing kit and take it home.

4 years agoThough largely said to be self-organising the setting was well prepared to accommodate its student-guests. Our hosts were most interesting and enjoyable people. There was a good balance between what was taught more academically and exercises and fieldwork.
