Inspired by the philosophy of traditional Japanese gastronomy, this hands-on course introduces the essential techniques and traditions behind authentic sushi making, giving beginners the confidence and skills to start their own sushi journey. Groups of 8 to 12 participants, with a shared tasting of everything prepared across both sessions.
The course opens with what Chef Rui Fonte considers the most important ingredient in Japanese cuisine: rice. Achieving the perfect texture and seasoning is the foundation that makes everything else possible, and the first session dedicates the time and attention this deserves before moving into the techniques for preparing sushi and sashimi. Across the two classes participants prepare a variety of sushi and sashimi styles with progressively growing confidence and precision, guided by a chef whose years running a Japanese izakaya in Lisbon give him a depth of knowledge and a genuine passion for this cuisine that is immediately felt in the room.

I am Isabel Cardoso, instructor and manager at Chezmoi in Lisbon, and this workshop is led by Chef Rui Fonte, former chef and owner of Tasca Kome, a Japanese izakaya in Lisbon.
